Maison Saint Aix is situated in the vineyards of a 140-year-old domaine at one of the highest elevations in the region. The Mistral wind keeps grapes dry and healthy. AIX Rosé is produced in the typical Provençal style using the direct pressing method. To avoid oxidation, the grapes are cold soaked and chilled to 46˚F. The grapes are destemmed, pressed and macerated at low temperatures for 5-6 hours. Each variety is fermented separately at low temperatures to preserve aromas. AIX uses cold stabilization. The wine is kept on the lees in a closed tank with a neutral gas for one week at 35 degrees. The wine is then aged in stainless steel tanks for 2-3 weeks before bottling.

Harvest Note
The Provence region faced significant challenges this year, including frost and intense mildew pressure, with some wineries experiencing losses of up to 40%. Maison Saint Aix was fortunate to have minimal losses due to the higher altitude of the vineyards—among the highest in the region—and the diligent efforts and precautions taken throughout the season. The harvest was one of the earliest ever, beginning on August 28th. The grapes were of exceptional quality, laying the foundation for another remarkable vintage.

About the Grape

Cinsaut
Ripe and meaty over elegant, with rose and almond notes, Cinsault’s relatively low tannins typically relegate it to blends with other varieties, as with Châteauneuf-du-Pape and Tavel Rosé.
Grenache
Grenache is loaded with dense, lusty aromas and flavors of black cherry, blackcurrant, jam, pepper and licorice, with a palate-coating texture and high alcohol.
Syrah
Syrah has seductively dense, rich, chewy black berry aromas and flavors, with notes of tar, wood smoke, bacon, leather, chocolate, and sometimes violets. The tannins are firm yet elegant.
