Les Jalets is the ancient term for “galets”, the large, round, well-worn stones that were carried down from the Alps by glaciers during the last ice age. The Syrah grapes are from vineyards located in the terraces of Les Chassis in Crozes Hermitage. The vineyard is a stony plain of glacial origin with deep soils composed of clay and pebbles or galets. These rounded stones soak up heat from the sun during the day and they it release at night, enabling grapes to mature at an optimal steady pace. The organic grapes grow on 25-year-old Syrah vines. The grapes are hand-harvested, carefully sorted, and destemmed. The maceration lasts for three weeks with daily pump overs. The wine is aged for 12 months in a combination of French oak vats (50%), French oak barrels (25%), and stainless steel vats (25%). Potential to age up to 10 years.
