The Cortese grapes are selected from vineyards of clay marl soil rich in iron located on high hills near the town of Gavi. The sea breezes from the Ligurian Sea and cool mountain winds from the Apennine Mountains create a microclimate ideal for growing Cortese grapes to optimal ripeness. The grapes are pressed without crushing and the must is cold settled before undergoing a low-temperature fermentation using indigenous yeasts. The wine is aged for 3 to 4 months on the lees in stainless steel tanks before bottling.

Harvest Note
After two consecutive years marked by low rainfall, in 2024 rainfall returned to more typical levels, restoring water reserves. Rainfall was spread across February to May, and then again from mid-September onwards. As a result, 2024 proved to be a very demanding year in the vineyard. It was a vintage where the expertise of the grower played a crucial role - everything from timely disease prevention to the late-summer tasks of leaf thinning and crop thinning. Mid-June to mid-September was warm and dry, allowing white grapes to reach optimal ripeness. The second half of September and early October alternated between dry spells and rainfall, which made harvest timing critical. Overall, it was a great vintage for white grapes.
