Xarel-lo is one of the foundation varieties of the sparkling wine Cava. It is strongly flavored and provides the distinctive aroma that characterizes the sparkling wine. It is also vinified as a single variety in Allela.
Vigorous and productive, Xarel-lo needs careful pruning and buds early, leaving it prone to spring frost damage.
Xarel-lo is indigenous to Spain. The vine is mainly found in Catalonia and thrives in the central Penedes’ moderate elevations on south and southeast facing slopes.
