Takaaki Yamauchi, simply known as “Taka,” is the 7th generation Brewmaster and President of Huchu Homare. Taka made history in the sake making world when he re-cultivated Watari Bune rice, a varietal that had been extinct for seventy years. He named his brand after the rice and has inspired many other sake makers and rice farmers to bring back historical ingredients and methods.
