Toshiaki Imaoka operates the Fuji Brewery independently with just 3 kurabito, or brewery workers, and produces 300 koku (1 koku = 1800L), the Japanese measurement for brewery size.

Owner, President, Brewmaster
Toshiaki Imaoka is the 3rd generation Brewmaster and President of his family’s brewery. Unlike many breweries that have been handed down for many generations, Imaoka-san’s grandfather took over the brewery from the original owners when it was going bankrupt. With his father, “Toshi” has brought the brewery even farther, making Izumo Fuji a rising star in the sake world.
